Early fall is peak season for edible wild mushrooms .But before you serve your finds at a dinner party ,it might be a good idea to to brush up on fungi.On the first weekend of October,a three day,two night program is being offered near Algonquin Park to teach the uninitiated how to identify,prepare and enoy some of Ontario's best wild mushrooms.The package includes bed and breakfast accommodations,field instruction with expert Bob Bowles,a cooking demonstration and feast,and an instructional session with Muskoka artist Bev Easton,For those who just want to learn the difference between the delicacy and the deadly, a shorter two day package is available.

"Those who would like to create their own culinary delights are welcome to Woodland Springs two-day cooking school with chef/cookbook author /Toronto Star Columnist Pamela Steel. "Some B&B guests might prefer simply to relax. The Woodland Springs "Women's Wellness Group Weekend" is one perfect opportunity. On Friday evening, guests arrive for hor d'oeuvres and visit hearthside stations for three treatments, usually pedicure, reflexology and therapeutic touch. "And then says Musselman they float into bed."

"The next day after a sumptuous breakfast from Musselman's breakfast menu of 50 Muskoka and Mennonite specialties, participants are led in qi gong, an ancient Chinese breathing exercise. This is followed by a session of Tai Chi, on top of the 2000 sq. ft. boathouse. "When they are on top of the boathouse it is like they are in communion with the sky,"says Musselman. The weekend is capped off with a Sunday workshop on spa cuisine, taught by Pamela Steel."

"A new package at Woodland Springs this year is "Nestle Down with a Good Book - B&B Dialogues" with Muskoka author Mel Malton, whose 4th novel will be released in October 2003. The getaway is complete with discussions of 3 books selected by guests, an optional creative writing workshop ,readings by Malton, and a trip to The Bookcase in Huntsville."

Sunrise Pickled Peppers

Gaye Musselman invited me to her Muskoka lakeside bed and breakfast for a terrific afternoon spent putting up these peppers. For more of her recipes visit www.penlake-woodlandsprings.com

9lb.red peppers .................For Brine : 1 gallon water and 1cup coarse pickling salt

3 lb.yellow peppers

3 lb.orange peppers .......For Syrup : 8 cups each of water, white vinegar and granulated sugar& 4 tbsp. pickling spice

Place 12 pint canning jars and new lids in simmering water in canner or on rack in a large pot to heat for 15 minutes.

Wash peppers and remove any bruised spots. Core and cut into 1 1/2 inch strips.

Combine water and salt for brine and heat ,covered, in a large pot over high heat to boiling [about 15 minutes] Pour brine over pepper and let sit for one hour.Drain.

Combine syrup ingredients in large pot over medium -low heat for 1/2 hour.Ladle 2/3 cup of syrup into a large skillet over high heat : add enough peppers to cover bottom of the pan and cook stirring , until syrup becomes thick . Use sterilized tongs to to pack peppers into jar.remove any air bubbles by inserting a clean non-metal utensil between peppersand glass. Pour additional syrup into jar to within 1/2 inch of of rim.Clean rim of jar and snap lid over top. Using fingers only , screw until tight.

When jars are filled place in simmering water in canner and correct water level so it is 1-inch over top of jars. Cover,bring to a boil and process 20 minutes.

Remove jars and let cooland rest for 24 hours. Check seals:lids should not move when pressed. Remove bands and wipe dry.

Replace if desired, taking care not to break seal by over tightening. Makes 12 pint jars.

On the 4 poster cherry bed lies a maize and green "sunflower " quilt from the 30's . This was a quilter's first attempt and was kept in a box for over 50 years -too precious for daily use ."....................On a honey maple bed lies a poppy flower quilt made from a kit from the 80's ,startling in its contrast of scarlet, red and tawny orange tones on white background.The Tree of Life quilt "Norm's quilt" was carefully appliquéd daily by my mother after visiting Norm ,my father in hospital for over a period of a year . The comfort in creating something beautiful to be passed on to the family eased the pain of saying good-bye daily.................
