"On Saturday morning, I was greeted with coffee & fresh warm muffins in the dining area. This preceded a full delicious gourmet breakfast served on delicate flowered china with linen napkins. The food defies positive praise and is light, tasteful and ingeniously served. I chose from the ample menu fluffy eggs in a cheese soufflé nest with crusty wheat tart. Next was a parfait of fresh fruit, crumbly granola with fresh pecans and cashews. There were also wafer thin crepes with red strawberries if you had room. A snack at noon was hardly necessary but I appreciated the variety of teas to choose from and the pile of freshly baked muffins. Our hostess, Gaye Musselman, seemed hardly winded and insisted she loved the cooking and entertaining!" ES, Toronto, 2003

Recipe of the Month

Farina Custard & Spiced Peach/Honey Toasted Wheat Shreds
-an original from Woodland Springs B&B

All Food Groups in One Dish - A Complete Breakfast

Heat oven to 375'
For Single Serving: Pam spray a one-cup ceramic ramekin.

In a saucepan bring to a boil 1 cup milk,1 Tbsp. butter,1/4 cup sugar,
Whisking constantly, slowly add 2 Tbsp. cream of wheat until it thickens and comes back to the boil. Remove and cool.

In bowl whisk 1 egg , 2 Tbsp. orange juice, zest of lemon to taste and a touchof vanilla.
Slowly whisk into cream of wheat mixture .Set aside to cool.

Place in the 1 cup ramekin and bake in oven 375' -10 minutes .
Reduce heat and bake 325' for 30 minutes longer until puffed.

In saucepan create spiced sauce ¼ cup water sugar syrup with 1 clove and cinnamon stick bit and both lemon or orange zest to taste Put fresh/frozen peach slices on top of ramekin and pour some sauce over all.

Garnish custard with spiced fruit and dried honey buttered Shredded Wheat crunchies baked ahead and stored in air proof container.

PENLAKE WILD RASPBERRY CORDIAL
in Season- set aside the day to find the berries close by .
1 qt. Raspberries 1 pint or less of vinegar

Add raspberries to vinegar and let stand overnight Strain and measure 1 pint of juice to each pound of sugar. Boil for 15 minutes. Pour into sterilized bottles and seal. Dilute with water to desired strength and serve chilled


MUSSELMAN'S SOUR CREAM APPLE PIE - our family favorite for any special holiday

One 9"' pie crust (1/3 cup flour) Apples to fill it heaping full (2/3 cup cream -any kind- I use sour cream) I cup or less dark brown sugar (3/4 tsp. cinnamon) 3 Tbsp. Butter (2 to 3 tsp. Cider vinegar to taste)

Mix butter ,sugar ,flour into crumbs. Sprinkle 1/4 into bottom of shell. Put in apples and heap them in the pie. Sprinkle apples with cider vinegar. Mix 1/2 remaining crumbs with cream and pour mixture over apples. Finally , mix the remaining 1/4 crumbs with cinnamon and sprinkle on top. Bake in a 425' oven for 20 min. until the crust browns slightly and then reduce to 350 ' up to another 30 min. Serve with ice cream or old nippy cheese.


PENNSYLVANIA DUTCH APPLE CAKE- a recipe from my Mother.

1 cup oil ,1 1/2 cups white sugar, 3 eggs, 2 cups flour, 1 tsp. each of salt , cinnamon, baking soda, and vanilla ,1/2 cup chopped walnuts, 2 cups grated apple finely packed.

Topping ---2 tsp. sugar, 1/4 tsp. cinnamon, 2 tsp. ground nuts.

Mix oil and sugar. Add well beaten eggs . Stir in dry ingredients. Add vanilla. Fold in apples and nuts creating a thick batter. Scrape into greased tube pan. Sprinkle on topping. Bake 375' oven for 50 minutes or more if centre is wet. Lower temp. to 300' and cook another 15 to 20 min.


FRIED GREEN TOMATOES IN SEASON

Slice 2 large green tomatoes 1/2 inch thick. On a shallow plate, dredge with1/4 cup flour & a generous pinch salt. Fry in 1 Tbsp of butter in cast iron fry pan at medium heat. Start to brown & turn and dot with 1 tsp . butter and sprinkle with 2 Tbsp. Brown sugar [ other herbs as desired] Cook until both sides are caramelized about 1 1/2 minutes .Serve immediately.


APPLE and SPICE BREAD PUDDING - A VERY OLD RECIPE

3 medium apples, peeled and chopped 3 cups cubed day old bread 2 large spoons of butter a scoop of raisins [ boiled &drained] 2 cups milk 4 eggs a fist of packed brown sugar drop of vanilla a generous pinch of cinnamon

Cook apples and butter in skillet until soft. In a 1 1/2 qt. buttered casserole dish combine apples, bread cubes and raisins. In another bowl beat together eggs ,milk ,brown sugar, vanilla and cinnamon and pour over apple mixture. Cover and refrigerate overnight .Bake in a moderate oven until knife inserted in center comes clean, about 45 to 55 minutes. Serve hot warm or chilled with Musselman brand Apple Butter.


MUSKOKA CRANBERRY, APPLE, & SAUSAGE CASSEROLE

2 lbs. of St Jacobs farmer's sausage, pricked with a fork - simmered in water , drained, and browned. Slice into coins. 8 slices cubed bread ,2 to 4 large apples and 2 cups cranberries fresh[ or dried to taste], softened with plenty of onion and butter in pan. 8 eggs beaten with 2 cups milk and a tsp. of dry mustard . Cover and refrigerate overnight in a 15"x 10"casserole dish. [Optional] Sprinkle sharp cheddar grated cheese on top, Bake 350' for at least 30 min until crisp and golden. Let stand 5 minutes before serving. Serves 10. Serve with Musselman brand Apple Butter


CARROT MARMALADE- SCHMECKS -Goot !

1 gallon carrots 6 oranges -both zest and pulp(juice and grated zest of 3 lemons) 2 tsp. each of cloves, allspice and cinnamon [spices optional to taste ] sugar -experiment to taste-the less the better -up to 1/4 cup for each cup carrots

Boil the carrots in enough water to cover. When tender , strain and reserve the carrot water. Put the carrots and oranges (cut up) in the chopper. Add lemon juice and zest. Mix well and add carrot water and 1 scant cup of sugar to the mixture. Boil for half an hour, stirring often. When mixture has thickened, pour into sterilized jars.


GRANDMA BETTY LOU'S SOUR CREAM COFFEE CAKE
Elizabeth was our Musselman Grandmother and Louise was our Sengbusch grandmother……We have forgotten who gave us this recipe! In honour of both we name the Cake" Betty Lou." Just like the old launch .

Heat oven to 350' Butter a 9" spring form pan……..very thick batter. Bake for 1 hour until done. Topping: I cup walnuts chopped 1 tsp. cinnamon 1/4 cup melted butter 1/4 cup white sugar 1/3cup brown sugar

Cake: 2 cups sifted flour, 1 tsp.baking powder, 1 tsp.baking soda,1/2 tsp salt,2 eggs, 1 cup sour cream,1/2 cup soft shortening,1 cup sugar ,1 tsp. Vanilla. Sift dry…Cream the rest. .Combine in halves.. except sour cream which you mix in gradually till smooth. Half the topping goes in middle of cake.


ANOTHER VARIATION - CRANBERRY NUT COFFEE CAKE- from a dear old friend

Topping:1/2 cup butter softened , 2/3 cup brown sugar,nuts and cranberries to fill 2 cups

Cake: 2 eggs ,1/3 cup butter, 3/4 cup granulated sugar, 1 tsp. vanilla, cinnamon to taste, close to 2 cups flour ,1 1/2 tsp. Baking pwd. ,1 tsp. Baking soda ,pinch salt ,1 cup sour cream

In saucepan boil first 3 topping ingredients and then pour into 9 in. buttered spring form pan lined with parchment paper. Sprinkle with cranberries and nuts .Set aside. In a big bowl, cream butter and sugar until fluffy .One at a time beat in eggs. Add vanilla. With whisk combine dry ingredients in another bowl. Combine 1/2 dry into wet mixture; stir in sour cream and then remaining dry mixture. Place batter in spring form pan pushing higher towards edges. Wrap foil under pan . Bake for 1hour at 350' or until done. Cool 10 minutes & invert to serve.


OVEN SHIRRED EGGS - from another dear old friend

12 eggs ,1/2 cup half and half cream [optional] ,1 cup grated sharp cheddar preferably Schneiders. Preheat oven to 450 degrees.

Spray one muffin tin [12 cups] with non stick spray. Break one egg into each muffin cup. Pour I tsp.. half & half over each egg. Sprinkle with grated cheese. Bake for 8 minutes, being careful not to overcook. Carefully lift eggs from muffin cups with spoon. .Serve over toast points or English muffin halves. Serves 6


LANCASTER COUNTY PUMPKIN APPLE STREUSAL COFFEE CAKE

Cake:2 1/2 cups cake flour, 2 eggs, 2 cups sugar, 1 cup pumpkin puree, 1 1/2 tsp. Cinnamon ,1/2 cup vegetable oil ,1 tsp.. nutmeg ,2 cups peeled ,chopped apple, 1/4 tsp of cloves, 4 chunks of candied ginger finely minced ,1 tsp. baking soda 1/2 tsp. Salt ,

Topping: 2 Tbsp. Flour 1/4 cup sugar 1/2 tsp .cinnamon 4 tsp. Cold butter .In a large bowl, combine dry ingredients; set aside. .In another bowl, combine wet ingredients.Add wet to dry until moistened. Gently stir in apples. Spoon into a Pam sprayed and floured 10 inch spring form pan. Combine topping and cut in butter until crumbly. Sprinkle over batter.Bake at 350' for 35 to 40 minutes, or until cake tests done. Serves 12 generously.


DOUBLE DUTCH STICKY APPLE SNITZ WALNUT CAKE with Cider or White Sauce

1/2 cup white sugar
2 cups flour
1 1/2 cups dark brown sugar
1 1/2 tsp.baking soda
2 large eggs lightly beaten
pinch salt
1 cup butter melted and cooled
1 tsp.cinnamon 1 cup snitz cut in 1/2 " pieces
1/2 tsp. nutmeg 1 cup light raisins soaked in 1/3 cup cider
cloves to taste
2 medium sized apples cut in 1/2 " pieces [one with skin & one without]
3/4 cup chopped walnuts

Mix the above dry ingredients separately

Fold in the dry ingredients after the first list has been thoroughly mixed.The batter will be extremely thick. Grease a 9" springform pan.Bake at 325` for one hour or more.The centre should not be wet but do not overbake. After cool, wrap tightly and this will keep at room temperature for days .

It is best served warm with cider sauce or a simple white sauce [In double boiler melt 3 Tbsp.butter, add 2 Tbsp.flour and allow to bubble. Add 1 cup milk and stir until thick.Add vanilla to taste later off heat. This doubles or triples easily.]


FOOD FOR A BARN RAISING "A Peep into The Past"

This bit of information was found in a quaint old handwritten book from Great- Great- grandmother's day. As many of us know, a barn raising was quite an event during those early years. When a new barn was built, all the friends and neighbours came on a specified day to help put up the framework of the barn. Homemakers will be astounded at all the food consumed in one day. What is more difficult to believe it was all made in grandmother's kitchen.

Here is the list as I found it :

115 lemon pies
500 fat cakes [doughnuts]
15 large cakes
3 gallons applesauce
3 gallons rice pudding
3 gallons cornstarch pudding
16 chickens
3 hams
50 pounds roast beef
300 light rolls
16 loaves bread
red beet pickle and pickled eggs
cucumber pickle
6 pounds dried prunes stewed
1 large crock stewed raisins
5 gallon stone jar white potatoes and the same amount sweet potatoes

ENOUGH FOOD FOR 175 MEN FOR ONE DAY
